
Now it's time to pick tomatoes and prepare the sauce.


After collecting and washing them, the tomatoes are blanched for 3 minutes, dropped into cold water, peeled, cut, passed through, finally, cooked over low heat.
When the foam on the surface does not form anymore and removed the tomato sauce from the heat, one part is put into sterilized glass jars and sealed and the other is to be frozen.
While, hopefully, you’re relaxing in some beautiful place during your well earned holidays, we are gaining them now, till late November, till the Autumn rains and first cold winds come to ventilate our lands.
Until then, we’ll keep up with our labor, counting jars, oil containers, bottles, gunny sacks and pounds…
